About Cou-Yon's Cajun Bar-B-Q

Brothers Paul and Michael Mladenka opened Cou-Yon’s in Port Allen in 2009, bringing their barbecue tradition along with scratch-made sides and desserts. They learned the method from their grandfather, Charles Mladenka, a longtime charity and fundraiser barbecuer, who taught them the old-school way: let the smoke tenderize and enhance the flavor of the meat rather than overpower it.

That approach still runs the kitchen. The barbecue smokes for twelve hours, the sides and desserts are made from scratch, and the house sauces blend Texas barbecue tradition with Cajun seasoning. The result is a laid-back Louisiana barbecue joint that regulars have been returning to for over fifteen years.
